A Legacy in Every Leaf: The Phoenix Mountain Treasure
High in the misty peaks of Guangdong’s Phoenix Mountain (Fenghuang Shan), time moves at a different pace. Here, amidst volcanic soil and a unique microclimate, ancient tea trees have stood for centuries, their deep roots drawing minerals and wisdom from the earth. This is the birthplace of one of China’s most revered and complex oolong teas, known for its astonishing array of natural aromas.
We present to you an extraordinary offering from these storied slopes: a harvest from wild, uncultivated trees estimated to be over 500 years old. The leaves are processed into the celebrated Mi Lan Xiang tea style, whose name translates to “Honey Orchid Fragrance.” This is not an ordinary tea; it is a Phoenix Dan Cong tea that carries the essence of its ancient origin, resulting in a depth of flavor and aroma that younger bushes simply cannot replicate.
What is Phoenix Dan Cong Tea?
Dan Cong oolong tea, meaning “single grove” or “single bush,” is a unique category of oolong from the Phoenix Mountain region. Unlike blended teas, traditional Dan Cong is made from leaves harvested from individual, genetically distinct old tea bushes, each imparting its own signature aroma profile. Our selection focuses on the celebrated Mi Lan Xiang tea, renowned for its captivating natural scent reminiscent of honey and orchids.
The combination of this specific aroma profile with the material from ancient tree tea bushes creates a truly unparalleled drinking experience. The older the tree, the more developed its root system, allowing it to absorb a richer spectrum of nutrients. This translates into a tea liquor with greater complexity, a thicker, more viscous texture (known as “cha qi” or tea energy), and a remarkably enduring sweetness.
The Unmatched Value of 500-Year-Old Ancient Trees
Why does ancient tree tea command such reverence? Trees of this age are rare treasures. Their slow growth in wild, often harsh mountainous conditions leads to lower yields but supremely concentrated quality. The leaves are thicker, richer in beneficial compounds like tea polyphenols and amino acids, and produce a liquor that is both powerful and gracefully balanced.
This particular Phoenix Dan Cong tea offers a golden-yellow infusion that is brilliantly clear. The aroma is intense and persistent—a beautiful harmony of ripe honey, sweet orchid, and subtle fruity notes. On the palate, it is remarkably mellow and smooth, with a pronounced sweetness that emerges quickly and lingers long after the cup is empty. The “hui gan” or returning sweetness is profound, a hallmark of high-quality Dan Cong oolong tea.
Traditional Craftsmanship Meets Rare Material
The journey from leaf to cup is an art form. This tea is processed by master artisans in Chaozhou, following time-honored methods. After careful hand-picking, the leaves undergo precise sun-withering, indoor oxidation, pan-firing to halt fermentation, rolling, and multiple stages of charcoal roasting.
This meticulous roasting is crucial. It stabilizes the tea for long-term storage and develops the warm, deep base notes that complement the Mi Lan Xiang tea‘s innate floral sweetness. The finished dry leaves are tightly rolled, dark brown with a slight sheen, and exude a captivating fragrance even before brewing.
Flavor Profile & Brewing Guide
To fully appreciate this masterpiece, we recommend the Gongfu brewing method.
Dry Leaf: Dark, tightly twisted strips with a glossy sheen. Aroma is of baked honey, dried fruit, and a hint of orchid.
Liquor Color: Vibrant, clear gold to amber.
Taste & Mouthfeel: The first sip reveals a robust, rounded body. The prominent honey-orchid fragrance fills the mouth, followed by layers of stone fruit (like apricot or peach), a subtle mineral note (“rock rhyme”), and a warming charcoal roast from the traditional processing. The finish is exceptionally sweet and long-lasting.
Brewing Instructions (Gongfu Style):
1. **Teaware:** Porcelain gaiwan or Yixing clay teapot (approx. 150ml).
2. **Water:** Use filtered water heated to 95-100°C (203-212°F).
3. **Quantity:** Use 5-7 grams of tea leaves.
4. **Rinse:** Quickly rinse the leaves with hot water and discard this first infusion to awaken them.
5. **Steeping:** Start with short infusions of 5-10 seconds for the first brew. Gradually increase steeping time by 5-10 seconds for each subsequent infusion.
6. **Brews:** This ancient tree tea has excellent brew resistance and can yield 10-12 flavorful infusions, with the character evolving beautifully from steep to steep.
