White Tea

White tea is a slightly fermented tea. Its core processes are withering and drying, without pan-firing or rolling. The finished tea is covered with fine hairs (pekoe), yielding a light yellow, clear liquor. The flavor is fresh, mellow, and sweet with a distinctive “pekoe aroma and honeyed aftertaste.” Its natural processing preserves the original flavor of the tea leaves.
