Phoenix Dan Cong Mi Lan Xiang Tea: A Sip of Centuries-Old Harmony

High in the mist-shrouded peaks of Fenghuang (Phoenix) Mountain, where time seems to stand still among ancient, gnarled trees, a tea of legendary aroma is born. From wild, uncultivated trees that have witnessed over five centuries, we present a liquid treasure: our Phoenix Dan Cong Mi Lan Xiang Tea. This 250g offering is not merely tea; it is the distilled essence of a unique terroir, ancient wisdom, and a singular aroma profile known as “Mi Lan Xiang” – the captivating “Honey Orchid Fragrance.” Each leaf tells a story of resilience, and each cup offers an unparalleled sensory journey into one of China’s most revered and complex oolongs. Prepare to experience a harmony of intense floral sweetness, deep mineral complexity, and a lingering, profound aftertaste that only 500-year-old ancient trees can provide.

The Legend of Fenghuang Mountain: Where Tea Trees Become Living Heritage

The story of Phoenix Dan Cong Mi Lan Xiang Tea begins in the heart of Guangdong’s Fenghuang Mountain, a region so revered for its tea that its name translates to “Phoenix,” a symbol of renewal and rarity. Here, amidst volcanic soil and a unique microclimate, individual tea bushes—each genetically distinct—have grown for hundreds of years, developing their own signature aroma profiles. These are the legendary “Dan Cong” teas, meaning “Single Grove” or “Single Bush.”

Our Mi Lan Xiang variant is the crown jewel of this tradition. The name, translating to “Honey Orchid Fragrance,” perfectly describes the tea’s most enchanting characteristic: a powerful, natural aroma that seamlessly blends the rich sweetness of ripe honey with the elegant, delicate scent of orchids. This is not an added flavor; it is the innate genetic expression of these particular ancient trees, enhanced by their deep root systems that draw a complex spectrum of minerals from the mountain. Drinking this tea is to taste a place, a history, and a specific botanical lineage that cannot be replicated elsewhere.

The Art of Crafting Dan Cong: A Master’s Touch on Ancient Leaves

Transforming the precious leaves from these 500-year-old ancient trees into the finished Phoenix Dan Cong Mi Lan Xiang Tea is a testament to artisanal skill and respect for tradition. The process is meticulous, slow, and entirely by hand, ensuring the preservation of the leaf’s intrinsic character.

1. Reverential Harvesting: In early spring, experienced pickers selectively harvest the “one bud, two or three leaves” from these wild, ancient trees. The harvest is small, reflecting the rarity and value of the material.

2. Solar Withering & Indoor Oxidation: The leaves are first gently withered under sunlight to reduce moisture and initiate enzymatic activity. They are then brought indoors for the critical “Zuo Qing” process—a careful alternation of shaking and resting. This controlled oxidation is the alchemy that develops the tea’s complex aromatic compounds, particularly those that will express the iconic honey orchid fragrance.

3. Fixation & Rolling: At the precise moment when the aroma peaks, the leaves are pan-fired at high heat to halt oxidation (Sha Qing), “locking in” the fresh, floral-fruity notes. They are then rolled, which bruises the cells slightly, releasing essential oils and beginning to shape the leaves.

4. Charcoal Roasting & Drying: The leaves undergo multiple stages of low-temperature charcoal roasting over many hours. This crucial step removes any residual “greenery,” deepens the flavor, adds a warm, toasty base note that complements the high floral aromas, and ensures the tea’s stability for aging. The final product is a batch of dark, tightly twisted strips, each one a concentrated package of flavor from a living heirloom.

A Tasting Odyssey: Unlocking the Honey Orchid Symphony

To brew this tea is to embark on an evolving narrative of flavor, best appreciated through the Gongfu method.

The Dry Leaf: The leaves are long, dark, and tightly twisted with a slight glossy sheen. The dry aroma is complex and alluring, with immediate notes of baked honey, dried apricot, and a distinct floral orchid scent—a promise of what’s to come.

The Liquor: The brewed tea yields a luminous, clear liquor that ranges from bright gold in early steeps to a rich amber in later ones. It has a visibly thick, “oily” texture that clings to the cup, a sign of high content and ancient tree material.

The Flavor & Aroma: The first sip is a revelation. A wave of intense honey orchid fragrance fills the mouth, supported by a robust, rounded body. Layers of flavor unfold: ripe stone fruits (peach, apricot), a subtle minerality (“rock rhyme”), and the warm, comforting depth from the charcoal roasting. The taste is sweet from the start, with almost no astringency.

The Evolution & “Hui Gan”: The true magic of this ancient tree Phoenix oolong is its transformation. Over 10-12 or more infusions, the profile gracefully shifts. The initial explosive floral sweetness mellows, allowing deeper notes of spice, toasted grains, and a profound, cooling mineral sweetness to emerge. The finish is exceptionally long and clean, characterized by a powerful “hui gan” (returning sweetness) that lingers in the throat for minutes, leaving a delightful, refreshing aftertaste.

Brewing the Legacy: The Gongfu Method

To fully honor this 500 year old Dan Cong tea, we recommend the Gongfu brewing technique, which allows you to witness its entire flavor spectrum.

1. The Vessel: Use a 100-150ml porcelain gaiwan or a Yixing clay teapot dedicated to aromatic oolongs.

2. The Water: Always use fresh, filtered water brought to 95-100°C (203-212°F).

3. The Tea: Measure 5-7 grams of leaves for your 250g treasure.

4. The Awakening: Briefly rinse the leaves with boiling water for 3-5 seconds and discard this infusion. This “opens” the leaves and allows you to appreciate the initial, complex aroma.

5. The Steeping Symphony:
• 1st infusion: 5-8 seconds for a bright, aromatic introduction.
• 2nd-4th infusion: 8-12 seconds each, where the honey and orchid notes are most vibrant.
• 5th-8th infusion: 15-25 seconds, as deeper, mineral and roasted notes develop.
• Subsequent infusions: Gradually increase to 30-45 seconds. Savor the evolving journey.
